What’s clear from talking to experts in the grilling industry is that people are passionate about their accessories. “The right tools make a difference when it comes to grilling,” says Joe Downey, senior merchant of grills at The Home Depot. His recommendations run the gamut from the basic to the luxurious, a sign of just how many useful items are on the market.

Of course, there are also a lot of not-so-useful items on the market, too. Kell Phelps of the National Barbecue & Grilling Association vehemently warns against the steel bristle brushes that dominate the industry. “​​The bristles can break, stick in your food, and can cause great harm if swallowed,” he says, suggesting a scraper tool instead. He also says that his most essential accessory is a thermometer, a common sentiment among people in the industry.

Once a curiosity, cold coffee is now a staple — and cold brew is leading that charge. In the U.S., the cold brew market, which was $166 million in 2017, grew to $500 million last year and is projected to nearly double to around $950 million in 2025. And while a $6 cup of cold brew from the local café is a nice treat, a more sustainable (and equally delicious) everyday option is making cold brew in your own kitchen.

The actual mechanism of making cold brew — combine grounds and water, wait, and separate — is pretty simple, and there are any number of contraptions, from a French press to a mason jar with a cheesecloth lid, that can get the job done. Choosing the right beans for your device comes down to personal preferences, and knowing what kind of hot coffee you like (and being willing to engage in some trial and error) is the key to figuring out what those are.

Making cold brew coffee at home with high-quality beans is an investment, but it’s one that will pay off every time you sip one on a hot weekend morning or save 10 minutes on your way to work by not stopping at Starbucks.


What the Experts Say

You can make cold brew with any coffee beans, but industry experts suggest certain kinds that are particularly suited to it. “Cold brew coffee can be used to experiment with different beans,” says Tom Saxon, co-founder of Batch Coffee. “However, I prefer to use lighter, more complex coffees. As the coffee is brewed with cold water, albeit for a significantly longer time than any other brew method, the end cup is always extremely bright and has only a touch of bitterness, which accentuates the subtle flavor notes that can be found in high-quality specialty coffee.”

A major concern when making cold brew is the acidity of the coffee, as the long brewing time means more of the acid can come out than in other methods. Barista and food science expert Jennifer Pallian recommends light to medium roasted beans because “lighter roasts tend to have a more delicate and fruity flavor profile, as well as a higher acidity that can help balance out the sweetness of the cold brew.” Marko Lazarevic, owner of CraftCoffeeSpot.com, disagrees. He recommends dark roast beans, which tend to have lower acidity and sweetness. The balance is the same, in other words — a testament to the flexibility of the brewing method and the importance of finding your personal preferences.

Whether it’s used as a raw material for at-home roasting experimentation or an addition to a wellness routine, green coffee signifies an investment in self-improvement. Those who buy green coffee might not be trying to say that they’re superior to everyone else, but they are striving to be superior to the version of themselves who only knew coffee in its roasted form. That’s something to be celebrated.


What the Experts Say

One thing that’s clear from speaking to experts is that green coffee does not taste like, well, roasted coffee. According to Jennifer Pallian, a registered dietitian and trained barista, it has a “distinct vegetal and grassy taste with a lighter body and acidity than roasted coffee.” Joel Squires, head roaster at Generous Coffee, calls the taste “bitter and grassy.”

The conversation around the purported benefits of green coffee centers on chlorogenic acid, which is a major component of coffee — particularly green coffee, since chlorogenic acid levels decrease during the roasting process. Some recent clinical research studies have mentioned a decrease in the risk of a variety of diseases following chlorogenic acid consumption. “It’s a compound with potential antioxidant properties,” explains Pallian. “Research has suggested it may have health benefits such as weight loss and improved glycemic control.” However, drawing any firm conclusions about the health benefits of green coffee requires more research.

You’d think any recipe with just two ingredients would be simple, but the equipment used to prepare, combine, and eventually separate coffee and water can get really freaking complicated. Espresso machines and pour-over methods are fun for true coffee nerds, but if a solid cup of coffee is the baseline goal, a French press is the way to go.

However, choosing the best coffee for a French press can be a bit of a challenge. Although any coffee technically works, here, the particular brewing method lends itself to helping certain flavors come out of the bean. A good first step is to avoid big supermarket brands — these tend to be lower-quality beans ground for automatic drip machines. (Pro tip: a finer grind can clog the plunger in a French press and make for a bitter cup of coffee.) But beyond that, there are still so many options on the market, so SPY tapped coffee experts to advise on where to start (and to help narrow the playing field).


What the Experts Say

The only real rule for a French press is that the coffee beans on hand need to be coarsely ground. Barista and food science expert Jennifer Paillan explains that the French press method “involves immersing the grounds in hot water for a longer period of time, which can extract more of the coffee’s natural oils and flavors. Using beans that are too finely ground can result in a sludgy cup with a bitter taste.” That means that buying whole bean coffee and grinding it coarsely yourself, either at home or at the store, is your best bet.

Conventional wisdom says that dark roasts belong in French presses, but there’s reason to question that. Jessa Winn, owner of Procreate Coffee in Brooklyn, says that “you can’t expect that you’ll enjoy a dark roasted coffee in a French press just because people say it works best in a French press. The best beans to use are going to be the coffee you like.” And so, knowing your personal taste — roast level, flavor notes, acidity, et cetera — is the most important factor to consider when buying coffee for a French press. Use dark roast coffee only if you like dark roast coffee.

What is certain is that brewing beans in a French press will yield different results than brewing those same beans via other methods. Lily Blackburn of Kitchen Ambition says that French press brewing can exacerbate the acidic flavor in coffee that’s more present in lighter roasts. That might mean most people should stick with medium or dark roast coffee in their French press, but if you’re someone who likes an acidic cup of coffee, a light roast might actually be perfect.

What the Experts Say

Jennifer Pallian, a registered dietician and trained barista, lauds the distinct taste that blends the roasted flavor of coffee beans with the mild earthiness of mushrooms: “While its taste may not be for everyone, its proponents rave about its unique and rich flavor,” she says. If you love eating mushrooms, in other words, you can find a mushroom coffee that integrates the two flavors rather than using the coffee to mask the fungi.

Like Pallian, coffee expert Tim Lee is quick to point out that the claims of mushroom coffee proponents (namely immune system support, energy level improvement, and cognitive function enhancement) are just that: claims. He does point out that some mushroom coffees are made with a high enough mushroom-to-coffee ratio to have lower caffeine levels than traditional coffee, making mushroom coffee a simple way to reduce your caffeine consumption without resorting to decaf.
